Description:
Fresh, delicate white with great acidity and notes of jasmine, ylang ylang, and lemon.
Recommended Pairings:
Wonderful warm weather white wine enjoyed on its own or with any dish with subtle flavors but especially whole baked white fish, sauteed mussels, or spaghetti with clams.
In the Cellar:
About 75% of the grapes are stomped and pressed directly while the remaining fourth are harvested and macerated for three days before pressing.
Fermented and held in fiberglass tanks until bottling in March.
In the Vineyard:
There are seven different grape varieties that go into our yearly white. Aside from the primary three–trebbiano (also known as procanico), grechetto, and vermentino, we also blend small amounts of roscetto, malvasia puntinata, and petino romano, all harvested mid-September.
